Room Hours — January 2004

NEW DINING ROOM HOURS OF OPERATION:
Sunday – Brunch 11:30 am to 3:00 pm
Sunday – Lunch 11:30 am to 3:00 pm (during season)
Tuesday through Friday – Lunch 11:30 am to 3:00 pm
Saturday – Lunch 11:30 am to close
Wednesday through Saturday – Dinner 6:00 pm to close
Monday – Closed
The Dining Room will be closed on Friday and Saturday, the 2nd
and 3rd of January due to inventory. It will reopen on Sunday,
January 4th.
Bingo and Buffet will be on Thursday, January 15th.

FOOD SERVICE MANAGER
January 2004
Richard A. Simek, Jr.
Mr. Simek has been recommended by the
Restaurant Committee and approved by the Board of Directors to assume the
position of our Food Service Manager effective January 2, 2004. “Rick” (as
he likes to be known.) will continue to provide our food service as usual. We
will be going through a training process to get him involved with our present
system by the end of December. He will also hire several of the present
employees who wish to remain at the club. Richard presently has contracts with
Boonesdocks Grill and Toyota of Knoxville Deli. He will continue to run them
through other Managers; However, his main base will be at Green Meadow Country
Club. He will also be allowed to continue the policy of catering out of our
kitchen. The following is a brief resume of some of the work that Rick has done
over his career:
Over twenty years of culinary and management experience.
Served as personal chef for private residences in Palm Beach,
Florida.
Managed food operations for Private Island resort clubs.
Attended East Tennessee State University, 1982-1985.
Culinary Internship and Florida Culinary Institute, West Palm Beach, Florida.
Executive Chef: Collier Inn/Useppa Island Club, Bokeelia, Florida.
Banquet Chef; The Kravis Center for the Performing Arts,
West Palm Beach, Florida.
Executive Chef, Mobile catering for movie industry HBO/Disney, Atlanta, GA.
Restaurant Owner/Executive Chef, Knoxville, TN.
We plan on continuing the operation of our Restaurant as usual.
Rick will be presenting a menu to the Board of Directors before the end of the
year for approval. The Restaurant Committee will also be planning a “Welcome
Aboard” open house for Rick sometime in early February.
Please remember, that the only way Rick will be able to provide
the food and service that our club needs for the members to participate in the
restaurant. Come on out and have dinner with us. I am sure you will be
pleasantly surprised.

No trip to the club can be complete with a visit
to its dining room, which overlooks the back
nine and presents members of Green Meadow with
a fine array of dining options. All manner of choices,
ranging from delicate seafood to the more hearty steaks,
are always a choice for guests of the Green Meadow
restaurant.
|
Of course, equally important to the dining experience
is the atmosphere in which one dines. After all, what
good would a fine filet do someone if it was served
in the middle of a bustling crowd? The restaurant
staff takes great pride in presenting a pristine and
peaceful setting for its customers, setting forth lush
decorations complete with flowers at each table. This
natural environment provides a colorful spot for all
manner of Club member to sit and spin for a while.

In spite of rumors to the contrary, a meal isn't always the first
thing on a golfer's mind. Every now and then a less formal
environment can be the perfect way to relax; thus, Green Meadow
also maintains a fairly well-stocked bar and television lounge. A few
cold ones with the gang is always a good way to forget that
+10 score in the tournament, after all.

However, every now and then a relatively important dining event
comes along. It's an event so important that no regular locale
will suffice. There's going to be a crowd, and there's going
to be a premium demand for seats ... in such a situation, there's
only one solution even worth considering; the Main Ballroom.
|
Capable of seating larger parties, the Ballroom serves for situations
where a single table simply won't suffice. Available on contact and
negotiation with the administration, the Ballroom is ideal for birthday
events, meetings, dinners, and even the occasional out and out celebration.
